Healthy Quinoa Pancake Recipe
Pancakes are part of the typical American breakfast. Just because you’re trying to eat healthy doesn’t mean you have forgo pancakes forever. With this Quinoa pancake recipe, you can still enjoy one of your favorite breakfasts without bursting out of your skinny jeans!
Incredients:
1 cup quinoa
¾ cup flour
2 tsp. baking powder
2 large egg whites
¼ cup almond milk
½ cup dark chocolate chips (optional)
½ cup blueberries (optional)
In a bowl, combine the quinoa, flour, and baking powder. In another bowl, combine the eggs and almond milk. Combine the wet mixture with the dry mixture. Mix, and then add the chocolate chips or blueberries. Preheat a pan on the stove to medium-low heat and pour ¼ cup of the batter. Let the pancake cook on the first side until you see small bubbles appear around the edge, then flip and cook the other side.
Optional: Add bananas or nuts on top when you serve them.
