Cheesy Spinach Penne Pasta Recipe
Penne pasta: 2 cups
Spinach paste: 1 cup (to make spinach paste, wash the spinach leaves, boil it and then blend it)
Cottage Cheese: Cut in one inch cubes
Onions: 3 tbsp, thinly diced
Ginger paste: 1 tsp
Oregano: 1/3 tsp
Salt: According to taste
Black pepper: According to taste
Add one teaspoon salt in water and boil the pasta in a pot. Take a pan and put three tablespoons oilve oil and fry the onions till they are golden brown. Add ginger and fry it for 3-4 seconds. Add spinach and fry it for two to three minutes. Add salt, pepper and oregano and fry it for two more minutes. Remove this pan from the heat. Take another pan. Pour 2-3 tablespoons olive oil in it. Fry cheese cubes until they are golden. Then put the first pan (the one with spinach in it) again on the heat and add fried cheese cubes. Carefully stir it well, but make sure that the cubes do not break.
Put the pasta on the plate and pour the cheese cubes and spinach mixture on the top. Garnish it with grated cheese and lemon wedges. ENJOY!
